Last night was class two of my second course at Wilton.  We stayed an hour late and made a plethora of flowers.  We used Royal Icing for this class.  Royal icing is made with just powdered sugar, meringue powder, and some water.  It is also what I use to make sugar cookies.

We are supposed to save them for the last class to put on our final project cake, but alas I will already be in Houston and will miss the last class.  So maybe I will donate my flowers?!  Anyone in need?

A quick last minute attempt at a Royal Icing Pansy.  I like this one much better than the fondont ones we made last week (see below).  It is so much cleaner and more natural looking.
